This spicy snacks recipe is crispy from the exterior and tender from inside.

Ingredients:

200 gm yam (jimikand)

50 gm dry fig

30 gm bengal gram lentils (chana daal)

5 gm white pepper

5 gm mace

5 gm nutmeg

5 gm cardamom

5 gm small cardamom

10 gm coriander powder

10 saffron threads

5 gm caraway seeds (shahi jeera)

50 gm dried whole milk

10 gm onion

50 ml oil

50 gm garlic

50 gm ginger

20 gm sautéed gram-flour (besan)

50 gm ghee

150 gm mint chutney

200 gm salad

Red chilli powder (according to taste)

Salt (according to taste)

Method:

Step 1: Boil yam and bengal gram lentils together. Keep aside and let it cool.

Step 2: Now drain out the water and mash it finely.

Step 3: Crush all the spices and mix together. Add this to the yam mixture.

Step 4: Mix salt with dried whole milk and the yam mixture properly. Divide the mixture into 8 equal portions. Shape the portions into medallions (tikiya). Grill these with ghee.

Step 5: Serve this with mint chutney and salad.

Rajma ki galouti is a spicy and mouth watering starter.

Ingredients:

200 gm red kidney beans (rajma).

5 gm white pepper

5 gm mace

5 gm nutmeg

5 gm small cardamom

5 gm gig cardamom

10 gm coriander powder

10 saffron threads

5 gm caraway seeds (shahi jeera)

50 gm dried whole milk

10 gm onion

50 ml oil

50 gm garlic

50 gm ginger

20 gm sautéed gram-flour (besan)

50 gm ghee

150 gm mint chutney

200 gm salad

Salt (according to taste)

Red chilli powder (according to taste)

Method

Step 1: Boil red kidney beans and drain out the water.

Step 2: Add ginger, garlic and other spices to boiled red kidney beans. Mash the mixture well.

Step 3:
Add dried whole milk and salt. Divide the mixture into equal shaped balls. Shape the portions into medallions (tikiya). Fry till it turns golden from both the sides.

Step 4: Serve it hot with mint chutney and salad.
