Classic Christmas cake

Ingredients:

Melted butter to grease, 800gms dried mixed fruit, 410gms fruit mince, 1 tablespoon finely grated orange rind, 125mlorange juice, 80ml brandy, 250gms Western Star Chef’s Choice Unsalted Butter (melted and cooled), 1 cup (200g) firmly packed brown sugar, 2 cups (300g) plain flour, 1 tablespoon baking powder, 2 1/2 teaspoons mixed spice, 4 eggs, 1 cup (160g) blanched almonds, 2 tablespoons apricot jam, warmed

Method:

Step 1:Preheat oven to 150°C. Grease a deep 22cm round cake pan with melted butter. Line the base and side with 3 layers of non-stick baking paper, extending 5cm above edge.

Step 2: Mix the dried fruit, fruit mince, orange rind and orange juice in a large saucepan and cook it over medium flame. Stir the mixture until fruits get soften. Remove from heat and set aside for 30 minutes to cool. Add the brandy and stir well.

Step 3: Add butter and sugar in fruit mixture, mix them well. Mix the flour and baking powder. Add the combined flours and mixed spice to the fruit mixture. Add e eggs and whisk until well combined. Spread the mixture in the prepared pan and smooth the surface. Lightly tap pan on bench top to settle the mixture. Arrange the almonds over the top of the cake.

Step 4: Bake in preheated oven for 3 hours 10 minutes. Remove from oven. Brush hot cake with apricot jam. Cover cake with foil. Wrap cake in a tea towel and set aside overnight to cool completely.

Turn cake onto a serving platter to serve.

Low Calorie Almond Cake

Step 4: Finally, add the flour, baking powder and salt; beat well.

Step4:  Bake it for 10 minute on 375 degree until it gets golden brown. Now you can serve it cold.

Step5:  Beat cream cheese with 2 tablespoon sugar until it gets smooth. Again beat it  in amaretto and remaining 1 teaspoon vanilla.

Step6: Spread it in tart shell. Chill until firm.

Step7: Put fruit filling on the top of it. Whisk jam and water over medium heat until melted, boil for 30 seconds.

Step8: Cool it slightly, brush fruit with glaze, sprinkle remaining almonds over fruit.

Note:  you can also make it especially with berries and you can use it blueberries, raspberries, blackberries and slice of strawberries to covering the tart. It can serve at least 8-10.
