Rogan josh was brought to Kashmir by the Mughals. It is an aromatic lamb dish hailing from Kashmir and is quite popular in the Indian sub-continent, Singapore and the United Kingdom. Rogan josh (or roghan josh), an aromatic lamb dish is the sine qua non of Kashmiri cushine.

How to make Rogan Josh? Step 1: Wash mutton pieces and mix yogurt, ginger powder, salt, asafetida and half spoon garam masala in it and keep it for marinade. Step 2: Heat oil in a pan and roast meat pieces in low flame. Cook till the meat pieces getting caramelized. Step 3: Sprinkle water and keep on stiring. Step 4: When mutton turns brown then just add red chili powder, fennel powder and remaining garam masala, cloves, cardamom powder and screnpine essence in it. Step 5: Keep stiring and cook on low flame till the mutton gets soften. Step 6: put the rattan jot in it and now you can serve it.
