How to make Green Mango Rice?
Step 1: Cook rice and keep it aside. If you are using basamati rice then use 1.5 cups of water for each cup of rice.
Step 2: Heat oil in a pan. Add mustard seeds, cumin seeds in it. Once cumin and mustard seeds splutters, add cashew nuts, fry till it turns into light brown colour.
Step 3: Add green chilies, red chilies and curry leaves. Fry for 2 minutes.
Step 4: Add asafetida, turmeric powder and salt, fry for 2 minutes.
Step 5: Add the grated raw mango to it and mix it well with the other ingredients for 2 minutes. Do not cook mango more than that.
Step 6: Finally add cooked rice to it and mix it well. Take it out from the flame.
